I believe this is a state law issue. I have no clue what California law is; I know Oklahoma law only allowed our midwife to put a father's name down if I had been married or had an affidavit of paternity from the biological father. My daughter's birth certificate has no entry at all in that field.
I suspect that whoever attends the birth will make the appropriate entry or nonentry, and that you won't have any input, but a lot of that depends on who your birth attendant is.

The decision is a personal one, but "unknown" is one option. We recommend that you consult your home state's Department of Vital Statistics to clarify any state requirements.
